Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
In a mixing bowl, combine the creamy peanut butter, granulated sugar, and egg. Stir until well combined and a thick dough forms.
Using a spoon or your hands, scoop out portions of the dough and roll them into balls, about 1 inch in diameter. Place the balls onto the prepared baking sheet, leaving some space between each cookie.
Use a fork to gently press down on each cookie ball, creating a crisscross pattern on the top.
Bake the cookies in the preheated oven for about 10 minutes, or until the edges are lightly golden brown.
Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
