Peach Layer
Spread the thickened peach mixture evenly over the pre-baked crust.
Pour enough peach juice to just cover the peaches.
Triple Crust Top
Cut the remaining crusts into strips.
Arrange the strips over the peaches, first vertically, then horizontally, to form a lattice and achieve the triple crust effect.
Egg Wash & Topping
Combine the egg with 1 tsp of water for the egg wash and brush over the crust.
Sprinkle a mixture of sugar and cinnamon on top.
